Roasted Garlic goes with a lot of dishes and adds a different aspect to basic meals, like scrambled eggs,garlic bread, bruschetta, soups, salads, ect. Take as much paper off the whole bulb of garlic as you can,[ there is no need to cut off the tops] place bulb in a square of tin foil [enough to wrap bulb like a hershy's kiss] cover entire top with a heaped table spoon of butter or margirine, you can also drizzle with veg oil. [ olive oil does not work well] twist up tin foil like a hershy's kiss, bake or B.B.Q. at least 300 degrees for 45-60 mins remove from heat open tin foil taking care to reserve any liqiud, keeping in mind that its hot, squeeze pulp from the cloves skin into a bowl or plate add liquid then mash up with a fork or whatever you have.you can now use garlic as needed, it will keep a few days refrigerated.
