1 whole wild turkey breast deboned [2 fillets or both sides] domestic turkey also works.
salt and pepper to taste
egg wash [2 eggs,2 tbsp milk ,wisk together]
1 cup crushed cheese ritz crackers or breading of your choice
1/2 cup butter
1 oz white wine
Season the turkey breast with salt and pepper, dip meat in the egg wash shake slightly, then coat meat in crushed crackers, mean time melt butter in a heavy fry pan,there should be about 1/4 inch of butter, saute the breasts until browned on both sides,reduce heat, cover and simmer for 25 mins turning half way adding butter if needed,then mix in wine cover and simmer about 15 more mins depending on tenderness desired. Serve with your favourite side,s or slice and use for buns, pita's or bread, adding bacon, tomatoes lettuce onions mayo, ect. enjoy.

"TIP" Drinking leftover wine with meal is recomended.
