Beer Batter for Fish Empty

2 eggs beaten.
12 ozs of beer [best to buy a 24 in case you open the beer the wrong way]
1-1/2 cups flour.
1/4 tsp salt.
1/4 tsp pepper.
1/4 tsp nutmeg.
1/2 tsp baking powder.
Milk if needed [see below]
Cornstarch for dredging.

Combine beer and beaten eggs .Add dry ingrediants all at once. Mix until it just turns smooth. Adjust consistancy as required, if batter is heavy add a bit of milk if its to thin add a bit of flour. [ DO NOT OVER MIX OR BATTER WILL FAIL] Lightly dredge fish in cornstarch. shake off excess starch dip in batter and immerse directly into deep fryer at a 375 degree setting cook until golden brown serve immediately.enjoy.
