3 Tbsp butter
1/3 cup maple syrup
1 white onion sliced
4-5 chopped shallots
3 slices chopped bacon
1/4 tsp chili flakes [ add more if you like the heat]
4 cups chopped wild leeks [ cut off top leaves with about 1" of green remaining,remove slimy outer layers and wash well before choping]
3 tsp chopped garlic
1/2 cup water or white wine if you like to cook with wine
2 tsp bazil
4 cups beef stock
salt and pepper to taste
4 slices bread [your choice I like a dark rye bread]
2 tbs olive oil
1/4 to 1/2 cup old white cheese or your fav

In a wide bottomed soup pot, saute bacon on med heat until cooked do not crisp,[ you may need to turn heat down if pot is getting to hot] add sliced onions,shallots,and chili flakes saute stirring until onions are golden brown about 15-20 mins, [note if needed add a small amount of oil to keep onions from burning] when onions are done add butter, leeks and garlic, saute stirring until leeks are soft, add water[or wine] scrape pan to deglaze and get all browned pieces mixed in, simmer about 5 mins add beef stock and maple syrup, bring to a boil then simmer about 10-15 mins to meld flavors.While simmering take bread and brush both sides with olive oil, broil or grill until golden brown [about 1 min] when you are ready to eat soup place bread on cookie sheet top with cheese and broil until cheese is melted, [watch carefully as it burns easy] put soup in bowls top with bread and enjoy.
