Marvelous Moose Chops
4-6 center cut moose chops
½ cup water
6 oz. Crab meat
1 oz. Slivered almonds
2 stalks of celery, chopped
3 oz. Green olives with pimentos
1 small onion, chopped
1 clove garlic, chopped
2 cups salad croutons
½ cup moose broth
Salt and pepper to taste
12 oz fresh Parmesan cheese, grated
½ stick margarine
1 cup half and half
1 Tbs. sherry
Asparagus spears, cooked and chilled
In a fry pan brown the chops. Remove; add ½ cup water to the pan to make the moose broth. Chop the crab meat, almonds, celery, olives, onion, and garlic, salt and pepper, croutons; place in a small bowl and combine with broth mix well. Cut a pocket in the side of the chops and stuff with the crab mixture. Bake uncovered at 350 for 35-40 minutes.
Meanwhile in a saucepan, melt the margarine; add cheese, half-and-half and sherry. Cook over low heat until all ingredients are blended, stir continuously. Pour over the chops and bake at 325 for an additional 15 minutes. Serve and garnish with the chilled asparagus spears.
